Are all people that sell real estate REALTORS?

NO. If you've seen the commercials on TV, you need to look for the REALTOR trademark. Being a REALTOR is different than just being licensed to sell real estate. If you are looking for a home or want to list your property make sure you are getting the most help possible. Unless the agent you list with is a REALTOR it will NOT BE on REALTOR.com the #1 internet site people go to when looking for a home. REALTORS also abide by a strict Code of Ethics that licensees are not a part of.
How do I pick a realtor to buy or sell?

The first thing is to check around. It is just like looking for a Doctor-pick the one you feel has the most knowledge, can most specifically handle your needs, and lastly that you get along with them. There are LOTS of licensed practitioners in the area, but if you do your research you will find some stick out above the others and fit you. Ask if they have any additional education. For instance, I have my GRI, which means I am a member of the Graduate REALTOR Institute, and also a member of CRS, Certified Residential Specialist. In all, I have over 100 extra hours of education above and beyond 90% of licensed sales people.
I saw a listing with another company. Do I have to use them as my agent?

NO. Any person licensed to sell real estate can show you any property as long as you haven't signed a Buyer Representation Agreement with someone.
